Finally, Israeli chef Shimon, the pioneer for vegan and vegetarian Israeli and Mid-Eastern culinary in Riga, opened his own restaurant. Hummus, falafel, all-day-long shakshuka, bourek (cheese, olive, spinach pie), all sauces (amba, red and green schug, tahini sauce etc), their know-how 'falafel waffle', all bakery and pastries (maple syrup pakhlava) and many more are made daily right on the spot using Mid-East imported ingredients.
