Meet Svetlana, Latvia’s fine-dining queen turned sourdough sorceress, who swapped tweezers and foam for focaccia and fluff. As president of both the Latvian Chefs Club and the Bocuse d’Or academy, she’s basically the redhead Beyoncé of Baltic fine dining. Finally Svetlana opened her own spot: where she surprisingly moved away from complicated heaute cuisine. The girly dream team are baking pastries in her tiny bakery/deli called Re:maize in sleepy little Ropaži. Think: sourdough loaves that crackle like vinyl records, rye bread dense enough to stop traffic, and berry pies that’ll make your grandma weep with joy. The vibe? Cozy cafeteria meets deli, where you can sip obscure Italian and Georgian bio dynamic bubbly while dunking spoonfuls of hearty solyanka with traditional Latvian salads. And the best part: nothing gets wasted, every crumb, crust, and carrot top gets reincarnated like a flavor-forward phoenix. Definitely worth a drive!
